Method
- Julienne the ham, enoki mushrooms, and carrots, blanch them in water. In a pan, stir-fry the julienned ingredients with some oil and seasonings until cooked. Set aside.
- Spread out the bean curd skin and evenly spread a layer of mashed potatoes on top. Roll up the mixture with the julienned ingredients inside. Seal the roll with egg mixture.
- Coat the surface of the roll with flour, egg mixture, and breadcrumbs. Deep-fry in warm oil until golden brown. Drain excess oil and slice before serving.
